From his native land of Argentina to the lands of the Côte d’Azur, the path was passionate. This path paved with travel, discovery, ambition and hard work has led this super-chef to the top of his art. His boldness and vision are reflected in his Mediterranean cuisine that transcends the seasons. It is instinctive and generous, Mauro having long been convinced of the benefits of short circuits on the strength of products. With his strong links with the surrounding nature, he is committed to saving the planet. “Recently, more than ever, I have become aware of our vulnerability and the global impact of our lifestyles on the world,” he explains. “We are now faced with a real need to reinvent our activities in respect of our dear mother earth. Returning to our roots, putting ourselves at the service of the living, is what inspires our approach at Mirazur. Let’s learn together to listen to nature, to feel it, to understand it, to tame it, and to live it every day. “Mauro’s new culinary concept follows the lunar calendar, which now sets the pace for the work of the chef and his teams.
“The moon and the stars are the true conductors of the gardens; the lunar calendar highlights their interactions, the different parts of the plants and the elements of nature: the roots are thus linked to the earth, the leaves to water, the flowers to air, and the fruits to fire. Observing the forces at work in nature through our work in the gardens allowed us, while the restaurant was closed, to blossom our creativity and connect with our essentials. Thus the teams developed a cuisine in 4 variations, the result of this silent vital flow. “

From now on, each guest will travel through a well-defined sensory journey, around daring dishes coming mostly from the Mirazur gardens and highlighting the diversity of Roots, Leaves, Flowers or Fruits depending on the day they come. These four worlds are the common thread of an experience, and blend with the elements already present in the Chef’s cuisine: seafood from local and responsible fishing, selected farmed meats, and the treasures of the Mediterranean’s historical producers and market gardeners. His creations invite us to reflect on all the exchanges that are constantly taking place in our ecosystem. A network of interconnections that sustains life ….
